Roasted Pepitas

Roasted pepitas make a delicious snack that can also be used as a crunchy, healthy topping for salads or soups.

Ingredients
  

  • 2 cups raw pepitas
  • 2 teaspoons olive oil
  • ½ teaspoon salt plus more as needed

Instructions
 

  • Preheat oven to 350℉. Line a baking sheet with parchment paper.
  • In a bowl, mix pepitas, salt, and olive oil. Stir to coat evenly.
  • Transfer pepitas to lined baking sheet. Bake for 10-15 minutes, stirring after 5 minutes to cook evenly.
  • Let pepitas cool completely before storing in an airtight container.
